Hasn't been updated in some time, but apparently Dodge once put out a Towing Guide on their website, and it's still functional!

I was curious about vans, I found the following:
2003 dodge ram cargo van 2500 BASE, 2WD, MAXI Bed, 46RE Four-Speed Automatic Transmission, 5.9L Magnum(R) SMPI V8 Engine:
With 3:92 Axle Ratio Axle Ratio http://www.dodge.com/towing/D/vehic...ine%5E46RE+Four-Speed+Automatic+Transmission# You Can Tow 8000 lbs
Gross Vehicle Weight Rating (GVWR) http://www.dodge.com/towing/D/vehic...ine%5E46RE+Four-Speed+Automatic+Transmission# = 7800 lbs
Payload http://www.dodge.com/towing/D/vehic...ine%5E46RE+Four-Speed+Automatic+Transmission# = 2939 lbs
Curb Weight http://www.dodge.com/towing/D/vehic...ine%5E46RE+Four-Speed+Automatic+Transmission# = 4861 lbs
Curb Weight Front/Rear = 2761 lbs/2761 lbs
GAWR Front/Rear http://www.dodge.com/towing/D/vehic...ine%5E46RE+Four-Speed+Automatic+Transmission# = 3880 lbs/4670 lbs
Gross Combination Weight Rating (GCWR) http://www.dodge.com/towing/D/vehic...ine%5E46RE+Four-Speed+Automatic+Transmission# = 13000 lbs
This was for the 2500, I assume that the 2500 and 3500 are not significantly different other than, for some reason, the site doesn't list the 3500 as having the 5.9L V8, just the 5.2. With the 5.2 they list the GCWR as 12500lb instead of 13000lb. I also assume that this will be fairly consistent for all of the heavier B-series vans, so going a little bit older, into the eighties or nineties, this will basically hold true, and that the actual towing capacity will be determined by about 13000lb CGWR minus curb weight, so for class-B RV conversions they'll lose a ton or so due to accessories.
