Have 07 300 and 09 Challenger that have not had passenger side replacement done. Where does that leave us now?

That would be recall S43 for both vehicles. Call the number on the notification or your dealer here:
    https://static.nhtsa.gov/odi/rcl/2016/RCONL-16V352-8296.pdf
The 300 (LX) and Challenger (LC) use different Takata inflator kit part numbers, so be sure that the correct part is in stock and your name is on it before scheduling.
This recall is likely being rolled out in phases due to the huge 4.6 million FCA products affected by it.

We waited a year for my wife's 2012 Chrysler 200, it was finally done about 2 months ago.

I waited over a year for mine on the 2007 Magnum. I was in the "hot humid" region where they were supposed to have first priority.
I ended up selling it with he recall open. Local news busted some of the Atlanta dealers for having parts on the shelf "reserved" while others wanted the recall done and were waiting for parts. A day after they ran he exposé on the news about two people (one a Charger, the other a 300) who had been trying to get the recalls done, the local dealer magically had parts for them. I don't think you're supposed to have to make waves to get recalls done.

Waited about 6-8 months from the initial notification until the parts were available for R&R on my '06 Ram 1500 for both driver and passenger side airbags.

Drivers side - received notification August/September 2015. Part available and installed January 2016.

Passenger side -received notification October 2016. Part available and installed July 2017.

Hmmm. Just realized that the 04 RAM I bought has airbags and is probably on the recall list, Must check that out. I know the people I bought it from have just bought several Chevy Duramax trucks because the recalls on the 17 RAM Cummins trucks have been tying them up with downtime on trucks they're paying for but aren't allowed to use until the airbags are replaced. And then the water pump/fire recall is out there as well. Don't know if any of their Chevys have the twin fuel tank fire recall.

    Yep, it's on the list.

From what I've read, FCA stands at about only 30% replacement rate as of mid-October 2017.
