Have you checked your hinges for loose bolts or perhaps cracks? Maybe instead of the striker, you should try adjusting the catch mechanism in the door. Stupid question though, were they closing properly before you installed the door gaskets? If so, you need to go back over the gaskets and make sure they're fitted properly or maybe the wrong thickness?

It sounds plain and simple to me that the gaskets are the problem. Did you purchase them from a reputable Mopar repro place or some aftermarket place like J.C. Whitney? If aftermarket, then it may take a while to get them to crush in and they may never fit correctly.

If you have the time, you may just stand there and open and close each door several hundred times. But that could be very tedious, boring and tiring. Just keep the doors closed for few days if you can and the new gaskets will eventually "crush" into position.
